Generally I would like to say that I can only recommend this book to everyone!
Both beginners and advanced raw foodies! If I would have discovered this book earlier I guess I could have saved many a diversions, who knows... ?
I´ve been on a journey through the world of raw food since 2001 and since 2008 I have made even more crunch progress in my diet which has brought me a great deal further, both physically and mentally!
I simply felt best with this form of raw food.
What actually is the idea of 80/10/10?
The author, Douglas Graham, build his theory on the natural hygienics.
This suited me fine as I already am a health practinioner and find this holistic model of the healthy lifestyle on all levels to prevent disease a responsible way instead of healing very convincing.
Unlike Helmut Wandmaker who brought Natural Hygiene to Germany and through whom I started to eat raw food, this book focuses on the conscious and sparing consumption of fats. He also gives concrete recipes and calculations to implement this.
Wandmaker only made vague statements on this. He did speak out against processed fats but only said to consume 5% fat from nuts and seeds etc..
But it is not clear how much this actually really is. For instance from the total weight of the consumed foods?
80/10/10 means: 80% of the consumed calories should come from carbohydrates, each 10% from fat and protein.
The author also gives examples of calculations that help to find mistakes and how you can calculate better instead.
It is rounded off with a recipe section in which entire menu plans are presented that show how such a day can look like.
Why actually should fat be reduced in our diet?
What objections are there actually to "healthy vegetable fats" ?
Basically nothing at all, it's just a matter of the healthy amount. It surely makes a difference to eat one or three avocados a day. Or a handful of almonds instead of half a bag ... or even both ... .
Many raw foodists like to eat a lof fruit and a lot of fat. However, the two together do not mix well and this can lead to various problems. Eaten in direct combination it doesn´t digest optimally and can lead to indigestion. Even with the necessary time-lag it remains difficult as the metabolism does not function properly with an increased fat content in the blood.
Insulin which binds sugar and is supposed to transport it into the cells where it belongs and is utilised is blocked by the fat which increases the blood sugar level. This of course favours the development of Candida! But this does not mean that this is due to the fruit... . If the fat content in the blood is elevated over a longer period of time many raw foodists experience blood sugar disorders, difficulties concentrating etc. and not the feeling of wellbeing one hopes for with this type of diet!
On top of that the sugar does not get to where it is supposed to go, namely into the cells, and therefore no satisfying fullness can be achieved.
From this point of view it is of course understandable that many advise us not to eat fruit. But maybe we should just simply give it a go and leave out a good deal of fat and see what happens ...
I could write so much about this now but all this is already described so well and in detail in the mentioned book and would go beyond the scope of a website ...
Perhaps two more quotes as food for thought:
"It looks like Pizza, tastes like Pizza and is digested like Pizza" and
"Some raw food dishes contain more fat than junk food".
Doesn´t sound like a healthy diet, does it?
Better to have lots of fruit, enough greens and a little fat a day to make it balanced and work!
